Summit’s co-owners, Andy Lock and Domhnall Molloy, opened their first restaurant in the Lee’s Summit Lakewood area in 2013 and, after much success, expanded into the Kansas City Waldo area. Lock and Molloy previously worked with members of the Page Communications as both the local Kansas City leadership and then as regional managers for McCormick and Schmick’s Seafood and Steaks.
Summit offers a wide range of menu options. Brunch is available Saturday and Sunday from 10 a.m.-3 p.m. Lunch is served Monday-Friday from 11 a.m.-3 p.m. Dinner is served daily, Sundays 3-9 p.m.; Monday-Thursday from 3-10 p.m.; and Friday-Saturday 3 p.m.-11 p.m. Happy hour is available throughout the restaurant twice daily from 3-6 p.m. and, in another first for the Waldo location, 10 p.m.-midnight with drink and food specials.
Summit occupies the former Remedy Food + Drink and Kennedy’s Bar and Grill space at 500 W. 75th Street, the corner of 75th and Washington streets. The restaurant seats a total of 126 people – 60 in the main dining area available for reservations and large parties; 40 in a casual, walk-in seating area; and 26 at the full-service bar and nearby tables.
